Ingredients

  • 1/2 cup basmati rice
  • 1 liter full-fat milk
  • 1/2 cup mixed dry fruits (cashews, almonds, pistachios, raisins)
  • 1/3 cup sugar
  • 4 green cardamoms, lightly crushed
  • 1 tablespoon ghee
  • 8-10 saffron strands

Instructions

  1. 1Rinse the basmati rice well and soak it in water for 20 minutes.
  2. 2Heat ghee in a heavy-bottomed pan and lightly fry the chopped dry fruits until golden; set aside.
  3. 3In the same pan, bring the milk to a gentle boil, then add the drained rice and simmer on low heat.
  4. 4Stir frequently and cook until the rice becomes soft and the milk thickens, about 25-30 minutes.
  5. 5Add sugar, cardamom, saffron, and half of the fried dry fruits; cook for 5 more minutes.
  6. 6Serve warm or chilled, garnished with the remaining dry fruits.
