Ingredients

  • 4 medium eggplants
  • 1 tablespoon oil
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon salt
  • 10 green chillies
  • 12 garlic cloves
  • 1 cup roasted peanuts
  • 1 tablespoon sesame seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon goda masala
  • 1 tablespoon tamarind pulp
  • 2 tablespoons grated coconut

Instructions

  1. 1Slit the eggplants lengthwise, keeping the stems intact, and soak them briefly in salted water.
  2. 2Grind the green chillies, garlic, roasted peanuts, sesame seeds, coconut, coriander powder, goda masala, tamarind pulp, and salt into a coarse stuffing.
  3. 3Fill each eggplant with the stuffing and keep any extra masala aside.
  4. 4Heat oil in a pan, add mustard seeds and turmeric powder, then arrange the stuffed eggplants in the pan.
  5. 5Cover and cook on low heat, turning gently, until the eggplants are soft and the stuffing is cooked through.
  6. 6Serve with bhakri and extra peanut masala on the side.
